Spring Asparagus & Roasted Fingerlings

- 16 oz. Tasteful Selections fingerling potatoes
- 1 lb. of asparagus, trimmed and diced in 2-inch sections
- 2 tbsp. olive oil
- Salt and pepper, to taste
Preheat the oven to 400-degrees.
Cook the potatoes for 12 minutes in a large pot of boiling water. Drain the potatoes, cool slightly, and then slice lengthwise.
Add potatoes and asparagus to a baking sheet, Toss potatoes and asparagus with olive oil and season with salt and pepper. Place on a baking sheet and roast in the oven for 10 minutes, until asparagus is tender.
