Roasted Fingerling Potatoes & Vegetables

Prep: 10 min. •  Cook: 25 min. •  Serves: 4


  • 28 oz. Tasteful Selections™ fingerling potatoes, sliced in half, lengthwise
  • 10 white mushrooms, sliced in half
  • ½ red onion, sliced
  • 4 cloves of garlic, skins on
  • 2 tbsp. olive oil
  • Salt and pepper, to taste


Preheat the oven to 400-degrees.

Slice potatoes, onions and mushrooms and toss with garlic. Spread veggies on a baking sheet and add salt and pepper, to taste.

Place vegetables in oven and roast for 15 minutes. Remove vegetables and turn with a spatula; return to oven and roast for an additional 15 minutes.

Remove potatoes from the oven and remove garlic from baking pan. Remove the skins from the garlic cloves and slice. Return sliced garlic to dish, toss and serve.
