Pesto Fingerling Potato Salad

Prep: 10 min. •  Cook: 12-15 min. •  Serves: 4-6


  • 28 oz. Tasteful Selections™ fingerling potatoes, cut in half lengthwise
  • 1 tsp. salt
  • ⅓ c. plus 2 tbsp. basil pesto sauce
  • ½ c. onion, chopped fine
  • ½ c. red pepper, chopped fine
  • Garnish: ¼ c. pine nuts-toasted, optional


In a large saucepan, bring potatoes and salt to a boil and simmer until tender, about 12-15 minutes.

While potatoes are cooking, chop the onion and red pepper. When potatoes are done cooking, drain them and toss with pesto sauce. Add onion and red peppers to potato and pesto mixture.

In a small sauté pan, toast the pine nuts over medium heat until lightly browned. Remove from the heat and garnish potatoes, if desired.
