Passion and Bleu Potatoes

- 24-28 oz. Tasteful Selections potatoes (Recipe favorite: Purple Passion)
- 1 tsp. salt
- 2 tbsp. butter
- ⅓ c. bleu cheese crumbles
- 2 tbsp. bacon bits
- 1 tbsp. finely chopped fresh chives (or 1 ½ tsp. dried chives), optional
- Salt and pepper, to taste
Add salt, potatoes and enough water to cover the potatoes to a medium saucepan and cook on medium-high heat. Cover and bring to a boil. Reduce heat to medium-low and simmer 10-15 minutes, or until desired tenderness.
When potatoes are done cooking, drain and add butter, bleu cheese, bacon bits and chives. Stir to combine. Season with salt and pepper, to taste. Serve hot.
