Fingerling Potato Chips

- 16 oz. Tasteful Selections fingerling potatoes
- 1 tbsp. paprika
- 1 tbsp. salt
- 2 tbsp. coarse black pepper
- 2 tbsp. freshly chopped cilantro leaves (or 2 tsp. dried parsley)
- 2 cloves garlic, minced
- Vegetable oil, for frying
Preheat oil to 350-degrees.
Thinly slice the potatoes and place in a bowl.
In a large bowl, combine the paprika, salt, pepper, cilantro and garlic. Set aside.
Slowly add the potatoes to the hot oil in small batches and fry until golden brown and crispy, about 2- 4 minutes per batch.
Remove the chips from the oil, drain on paper towels and toss in the bowl with the seasonings.
